Yes, It’s Keto Peanut Butter!
It’s a New Year, and along with it comes those pesky New Year’s Resolutions…..but you can totally afford to be a little indulgent when it comes to these keto diet friendly peanut butter chocolate chip mug cakes. Yes, you read that correctly…chocolate and peanut butter that is low-carb, sugar-free, and you can even make it dairy free by swapping out the butter for coconut oil. Keto Peanut Butter Goodness is quick and simple!
I know we all hate that word – DIET. For some reason, it conjures up images of munching on rabbit food with a miserable scowl; however, the keto diet offers so much flexibility, so be sure to try this super quick and amazingly delicious recipe. Each serving has less than four grams of net carbs but is not short on the flavor!
The best part is they only take five minutes of prep time, and one minute of cooking time, so you can whip them up for a quick breakfast if you want. Yes, I am encouraging you to eat dessert for breakfast….my children think I am the best mom ever when I make these for them, but they have no idea they are good for them.
I like to whip up a few servings and keep them sealed in the fridge to compliment my weekly meal-prepping, so I just have to uncover one, pop it in the microwave and enjoy. My recipe below makes 6 servings, so you can feel free to adjust accordingly to your own personal needs. Keep in mind, though, that it does have raw eggs, so you do not want to keep them uncooked in the refrigerator any longer than three days. Now you can enjoy Keto Peanut Butter.
Create your own Keto Peanut Butter Treat
- 1/3 cup peanut butter
- ¼ cup butter
- 2/3 cup almond flour
- 1/3 cup Swerve Sweetener
- 2 tsp baking powder
- 2 large eggs
- ½ tsp vanilla extract
- ¼ cup water
- 3 tbsp sugar-free chocolate chips
- In a microwave-safe bowl, melt peanut butter and butter together and mix until smooth.
- In a medium bowl, whisk together the almond flour, sweetener, and baking powder. Stir in the eggs, vanilla extract, melted peanut butter mixture, and water until well combined.
- Stir in chocolate chips.
- Divide among six microwave-safe ramekins or coffee cups and microwave each for one minute, until puffed and set. Serve warm.
